It is a premium extra virgin olive oil, cold-pressed from Picual variety olives. Harvested early, at the right moment when the olive is still green, before the fruit begins to color and the chlorophyll starts to break down.

Intense fruity flavor of green olives with notes of freshly cut grass, green almond, mint, artichoke, tomato plant, and green banana. Very balanced and harmonious bitterness and spiciness.
