The chosco de Tineo is a very peculiar Asturian sausage that has a great flavour due to its curing and smoking

It is made with pork meat stuffed in the animal's own intestine. It has lean pork and clean tongue, all seasoned with salt, garlic and paprika. It is then smoked with oak wood

Its flavor is marked by the marinade and smoking. Depending on the number of days it has been smoked and the type of wood used in the process, its flavour can be more or less intense

It is a juicy sausage that can be found raw or cured

The chosco is usually marketed cooked, and the way to consume it depends on how it is cured. If it is poorly cured it is boiled in water for about an hour (pricking it so it does not burst) and then it can be eaten even cold for several days after cooking. If it is matured enough it is consumed in slices directly without any other preparation.

The most traditional way to eat it is cut into thick slices and accompanied by boiled potatoes sprinkled with sweet or spicy paprika (to taste). It is also very common in the west of Asturias to use it for the compango of the fabada asturiana and for the pote de berzas.
