Cucumber stands out for its high water content (97%). It also contains vitamins and minerals.
How to preserve and prepare them?
Cucumbers can be kept in the fridge for three to five days. If you want to keep them, once cut, wrap them in clear plastic wrap because they easily pick up odours. They are not suitable for freezing.
It is a very refreshing food. It is consumed, above all, raw and natural, well washed and shelled, in salads. Also accompanied by lemon or yogurt; in gazpacho and salmorejo; au gratin with a béchamel sauce or stuffed with meat or seafood; pickled in vinaigrette as an appetizer; in salads, with mayonnaise or pink sauce; with tomato sauce and cheese, baked au gratin or as an ingredient in pizzas
Tip!: to avoid the bitterness of cucumber there are several simple tricks: soak it in salt for a few minutes or, after peeling it, grate it so that the bitter substances that are concentrated to a greater extent under the skin are eliminated. The most common trick is to cut off the ends and rub the tips with them until a white foam comes out: the bitterness will disappear.
