This rind is natural but has a range of colors ranging from grayish, white and blue-green depending on the range of molds that grow in their maturation. The smell of this rind is reminiscent of damp hay. The interior paste is a darker off-white colour than normal in a goat's cheese because it is cured and made from raw milk from animals that graze most of the year. These two aspects also influence its olfactory and gustatory characteristics: The smell is fresh and herbaceous, reminiscent of freshly cut hay or wild flowers. The texture of this paste in the mouth is a little harder than in semi-cured cheeses, it is also buttery at first but then solubilizes very well and shows its creaminess.
