The clam is a filter-feeding bivalve that feeds on the nutrients provided by the water that surrounds it. In this case that of the estuaries of Galicia, which makes it a clam of superior quality. It is known as the cultivated clam although it is officially called the Japonica clam. This name of "cultivation" is given because the fishermen and shellfish farmers "plant" it when it is still immature or too small to be marketed in areas of the estuary where they know it will be in the best conditions of growth and quality. Therefore, although it seems to be bred in a nursery, this clam is totally wild and will round off our dishes giving flavour and meatiness to those we prepare
