The presence of a black line in this cheese stems from anold farming tradition. Indeed, in the past, the leftover milk from milking was used by Comté producers to make a cheese for their own consumption. The curdled milk was covered with ash to prevent it from spoiling and falling prey to bacteria. The same evening or the next morning, it was covered with another fresh cheese. The result was a cheese with a black line running through it. Today, this black line is only decorative and is no longer obtained by adding ash but thanks to the use of vegetable charcoal. Its particularity lies in the fine black charcoal line that divides the cheese in 2 horizontally.
