The hard wheat used to make this pasta comes from extensive and rainfed crops, on private farms located in the steppe areas of Belchite or Los Monegros, in the Ebro Valley, where the El Planerón Bird Reserve is also located.
Riet Vell buys this wheat from selected farmers based on the location of their plots, under the supervision of SEO/BirdLife, and aims to offer better economic conditions. These are very unproductive areas in terms of kilograms per hectare, but ideal for high-quality hard wheat for the production of food pasta.
The steppe areas of Belchite and Los Monegros are characterized by a mosaic of crops, fallow land, and woody pastures that provide a suitable habitat for very rare and endangered species such as the Iberian Sandgrouse, the Pin-tailed Sandgrouse, the Stone Curlew, and the Dupont's Lark.
