100% Iberian Acorn Shoulder. "Pata Negra"
It comes from animals over 22 months old and weighing 160 kilos. The shoulders are simply seasoned with sea salt and, after a short period of salting, they are first taken to the drying room and then to the cellar. In total, over 24 months of curing and maturing, during which chemical changes and the formation of aromatic compounds occur, resulting in a loss of around 35% of their fresh weight.
The black hoof, synonymous with the authenticity of its genetics and the thin cane, are characteristic of 100% Iberian acorn ham. Among its attributes, the "flavour" (smell, taste, and texture combined), the shiny lean meat, and the fluidity of the fat are unmistakable and, when tasted, give rise to a series of sensory perceptions that awaken the senses, enhancing its unbeatable "bouquet."
They are 100% Iberian Acorn Shoulders completely certified by accredited certifying entities according to the Iberian Standard set out in Royal Decree 4/2014.
