Hard-cured cheese made with raw milk from Churra sheep and aged for a minimum of 90 days. A limited edition cheese inspired by Swiss techniques for making washed-rind cow's milk cheeses.

The rind has an aromatic intensity characteristic of washed rinds. It is characterized by the development of propionic eyes (holes) - typical of raw milk - encouraged by aging temperatures caused by natural fermentation, which create holes that give the cheese a fruity flavor. In the mouth, it is a friendly cheese, with a fresh taste, floral and citrus notes, and a melting texture.

Elastic-textured cheese, very suitable for cooking preparations where a melting touch is desired. Gratin potatoes or vegetables, pasta, hamburgers, toasts, etc. It reminds us in texture and shape of Raclette cheeses but with the contribution of raw Churra sheep's milk.

Limited edition. These cheeses are made with summer milk from 2023, which provides floral nuances based on the green feeding of our sheep. During this season, the farm is in full herbaceous and floral bloom. More than 100 liters of fresh milk are needed for each cheese wheel

Ideal to pair with unoaked white wines, sparkling wines, manzanilla or fino sherry.
