A Torna Dos Pasas Escolma is a red wine made with Brancellao, Caíño Longo, Ferrol, and Caíño Redondo, from the oldest vineyards of the winery, planted on slopes with sandy-siliceous soils.
The harvest is done manually. Each variety undergoes separate fermentation with native yeasts in stainless steel tanks. It is aged for 12 months in new French oak barrels. The wine is refined in the bottle for a minimum of 3 years before being released to the market.
Tasting Notes for A Torna Dos Pasas Escolma
A Torna Dos Pasas Escolma is a complex and balanced wine. The time in the bottle has polished the tannins, giving way to refined notes of aging. It is a wine, like its maker, serious, austere, and full of character.
