  • It has a minimum curing process of 24 months to achieve the properties that make it a unique piece.
  • It enjoys a good infiltration of fat with the meat so that each slice has the correct proportion of white vein.
  • It can be delivered whole or hand-cut with different weight options ranging from 5 KG to 5.5 KG.
  • In the hand-cut option, the cut respects the properties and quality of the shoulder so as not to lose the flavor. It should be kept at a temperature between 4-10o.
  • Store in a dry and cool place in a ham holder, avoiding sunlight and air.
  • After each consumption, cover with the fat itself and a dry cotton cloth or rag.
