More information

Already in the fifties, Severino was making his first vinifications in the underground cellars of La Horra. Gradually, with the profits obtained, he was buying more land and planting more vines in the surrounding area

In 1957, along with an enterprising group of winegrowers, he participated in the founding of the cooperative Virgen de la Asunción. His son Rafael continued with the artisan trade and, in 1992, decided to realise the dream he had had since he was a child: to create his own winery in the heart of Ribera del Duero. To do so, he had the unconditional support of his father and his two sons: Pedro and Jesús. Since then and until now, the premises have not changed.

The care of the vineyard

The care of the vine, the attention, the calm, the pampering and the silence in the upbringing, are the basis of their success. And the secret is in the grape. The quality of its 45 hectares of vines, some of which even exceed 60 years of life, offer a wines structured, exclusive and harmonious whose elegance has been recognized by the best tasters.

The Straightforward wines

The Philosophy of Viña Sastre is clear: to produce a limited production of wines with unlimited care.

With the aim of reflecting on the from the first year of production to the second year of production

With the aim of reflecting in them the expression of the land and the plant, a entirely organic farming is carried out from the beginning. In this way, the quality of the grapes is not diminished at any time. The whole process is natural, renouncing the use of all types of mineral fertilizers, herbicides, insecticides, pesticides and other inorganic chemicals

As for the ageing of the wines, the winery, like the great châteaux, divides the barrel cellar into two rooms. In the first, the more generic wines of the house mature, such as the Roble or the Crianza; and in the second the wines of the premium range, such as the Pago de Santa Cruz among others.

With an intense nose, the wines of the Pago de Santa Cruz are aged in the barrels

With an intense and expressive nose, Acos 2006 has a great definition and a consistent palate that goes through firm, sweet and well-integrated tannins. The spicy hints and toasted sensations with touches of lactic and toffee will delight fans of the great wines of Ribera del Duero. After several years of resting in the bottle, the last units of this wine are now in its optimal moment of consumption.
