The Altozano White Wine from Finca Constancia presents this IGP Vino de la Tierra de Castilla (Spain), created from the grape varieties Verdejo 70% and Sauvignon Blanc 30%.
The grapes are harvested at night in order to preserve the essence of each variety, which will be extracted in the press after a cold maceration. Alcoholic fermentation is carried out separately for each variety, and in order to profile its production, the wine remains on its fine lees for a minimum of two months, thus obtaining its final unctuousness in the mouth.
To preserve the fruity aromas of the Verdejo grape, a night harvest is carried out. A pellicular maceration is carried out and then pressed, obtaining the must.
