Viticulture: 100% Palomino from the Montegilillo vineyard, on the Carrascal estate, with albariza soils, very suitable for growing Palomino grapes
Making: Subjected to double aging. First a stage of biological aging, under veil of yeast flower, and later, when the veil is lost, begins a stage of oxidative aging. By concentration, after almost 20 years of aging, the alcohol content increases to over 20% vol. Aged for 18 years in the cellar of the Castillo de San Marcos, in the coastal town of El Puerto de Santa Maria
Matching: Serve as an accompaniment to consommés, foie gras, cold or smoked meats, with cheese boards, blue fish or seafood. It is a wine that pairs very well with spicy dishes.
