Definition : generous wine with Denomination of Origin Jerez - Xérès - Sherry, and indication of age, 15 years, two Crianzas, biological under veil of flor and physical - chemical by oxidation, natural Amontillado.

Vineyards : Superior Sherry. Pago Añina and Carrascal.

Processing : Mostos de primera yema from our best vineyards, cold static decantation and fermentation at 22ºC, early deslío, classification by finesse, fortification at 15º with the best wine distillates to obtain the traditional sobretablas, passage to the crianza and dynamic aging system, classic Jerez Criaderas and Soleras, by the 12th criadera where the biological aging takes place under veil of flor in traditional oak casks preferably American oak of 30 and 36 @ capacity for an average minimum time of 8 years and until the 3rd criadera to continue, in a natural way, 4 years more, in oxidative aging until reaching the solera where the "saca" is made for consumption.
Tasting notes : Wine with a color between very old gold and amber, very bright. Aroma very sharp and intense and complex with slight hints of the fino that was and hazelnut nuts. Dry, fair acidity with full-bodied and very elegant and persistent character in the mouth, retronasally tremendously expressive and not easily forgotten.
