Production and Aging
Ànima Negra ÀN/2 is made with the grape varieties Callet, Mantonegre, Fogoneu, and Syrah. The vineyards from which they come have been planted 50 years ago, the soil has abundant ferric oxide and a gravelly subsoil. The climate of the area is Mediterranean.
The grapes are manually selected in 10-kilogram boxes. Fermentation takes place at a temperature of 28ºC in stainless steel tanks. Maceration lasts between 17 and 25 days. Malolactic fermentation takes place in stainless steel tanks.
The aging process lasts 12 months in French oak barrels (70%) and American oak barrels (30%). 35% of the barrels are new, and the rest have had a maximum of three wines.
