This is a Premium extra virgin olive oil, cold extracted from Picual olives. The olives are harvested early, at the right moment when they are still green, before the fruit starts to change color and the chlorophyll is destroyed.

It has an intense fruity flavor of green olives with notes of freshly cut grass, green almond, mint, artichoke, tomato, and green banana. The bitterness and spiciness are very balanced and harmonious.
