Asturian Compango

The compango is the meaty accompaniment smoked used in the preparation of fabada asturiana and the stews lebaniego and montañés, generally consists of chorizo, morcilla and tocino entreverado. It is a typical ingredient in Asturian, Cantabrian and Galician which is added to all kinds of potages: with lentils, beers, etc. Nowadays you can find vacuum-packed compango in most Spanish supermarkets, generally of lower quality.
