The Tormaresca Bocca di Lupo Castel del Monte is an organic red wine made from Aglianico grapes in the sub-region of Castel del Monte DOC (Italy) by the Marchesi Antinori winery.

Upon arrival at the winery, the grapes were destemmed and placed on a sorting table for further sorting so that only the perfect berries reached the vinification vats. The alcoholic fermentation took place in stainless steel tanks at a controlled temperature of 26-28 °C. Maceration lasted 15 to 18 days and was managed with pump-overs interspersed with délestage and short pump-overs at the end for a gradual, gentle extraction.

Once fermentation was completed, the wine was transferred to oak barrels, where malolactic fermentation and the necessary refinement took place. After bottling, Bocca di Lupo rests for at least 1 year in bottle.
