Elaboration and Aging
Bosque de Matasnos is made with the grape varieties Tempranillo (90%), Merlot (5%), Malbec (3%), and Garnacha (2%). The aging of Bosque de Matasnos starts with the best raw materials, selected in the field and later on the selection belt. Average yield of less than 3,000 kg per hectare, mainly from old vines. The harvest of Bosque de Matasnos takes place from October 8th to 21st. An approximate yield of less than 3,000 kilos per Ha.
Only new French oak barrels (90%) and American oak barrels (10%), both premium quality, are used for aging, with 36 months of drying. It remains in the bottle for 12 months.
Tasting Note of Bosque de Matasnos
- Appearance: Bosque de Matasnos has an intense red color with violet hues and a very high layer due to our elaboration process with very long fermentations at low temperatures.
- Nose: On the nose, it has complex and highly intense aromas of ripe fruit with a magnificent integration of wood. We find ripe plums, some black fruit, very fine spices, bakery notes, vanilla, and cocoa. It also elegantly presents hints of caramel and cinnamon.
- Palate: On the palate, it highlights a good balance between acidity and ripe fruit, with black fruit appearing again. Light and very pleasant oily notes in the mouth, with volume and length. The tannins are sweet and well-ripened, with an aftertaste of elegant spices.
Pairing
Bosque de Matasnos is ideal to accompany stewed poultry, roasted red meats, grilled or stewed meats, blue fish, cheeses, cured meats, and foie gras.
It is recommended to consume this red wine at a temperature between 16 and 18ºC.
