From excellent white wines of Palomino and Airén, very young and fruity, fermented at low temperature and keeping some lees are distilled in stills at 65ºC to get excellent holandas. These are aged in American oak casks that have been wrapped with Oloroso de Jerez wine. The traditional system of Soleras and Criaderas is followed, entering the system from the tenth criadera, passing through the system until reaching the solera.
