This cheese from Asturias pcomes only from herds registered in the Cabrales Protected Designation of Origin.
Cabrales cheese is matured for more than four months in natural caves in the Cabrales region (Picos de Europa National Park). These caves have the optimal conditions of freshness and humidity for the development of penicillium molds inside, which gives the Asturian cheese its famous color
