Chistorra is a semi-cured sausage made from pork (dewlap or bacon). After the production process, it is dried for four or five days and then vacuum-packed. Arbizu chistorra is also well known by the name of "Chistorra verde" (green chistorra) due to the original colour of the traditional packaging.
