Cassia Cinnamon Stick is a type of cinnamon, known as Southeast Asian or Chinese cinnamon (as opposed to Ceylon cinnamon, which is used in baking). Cassia Cinnamon is thicker, harder, and forms a double spiral, with a darker color and much stronger flavor, and a typical spicy aroma.
