Making: Production of 13,000 bottles, hand-made.
Maceration film: 6-8ºC
Film maceration for 6 hours at 8 degrees Celsius to extract the maximum aromatic fraction. Destemming for 24 hours to achieve a clarity of 60 NTU (Nephelometric Turbidity Unit). Fermentation started in stainless steel tanks and after 48 hours racked into new French oak barrels with a capacity of 500 liters. fermented for 14 days at 18 ºC. Aged on its own lees for 9 months

D.O. Bierzo (Denomination of Origin)
The Bierzo region is located in the northwest of the province of León, within the Autonomous Community of Castilla y León, and occupies an area of 2,954.28 kilometers, which represents 18% of the provincial surface. Mencía
Main red variety from Bierzo and represents 74.5% of the grapes grown in the production area.low-yielding variety, early budding and early ripening. The cluster is small in size and medium compact. The berries are medium-sized, uniform and blue-black in color. The pigmentation of the pulp is not colored
Tintoracha tintorera
Red variety and represents 2% of the grapes grown in the production area. It is also known as Alicante bouschet.low-yielding variety, early budding and medium-early ripening. The cluster is large and medium compact. The berries are medium sized, uniform and blue-black in color. The flesh pigmentation is strong and has a reddish color
