The cockles from the Galician Rias are selected directly from the most prestigious Galician fish markets

The selection criteria is based on choosing the product with the largest size and highest quality during the extraction campaign.

The cockles are then selected from the Galician fish markets

Once the cockles are selected, they are subjected to a purification process with sea water. Once they are clean and free of sand, they are manually placed in the tin to be perfectly presented
