Elaboration and Aging
Contino Reserva is a blend of the Tempranillo (85%), Graciano (10%), Mazuelo (3%), and Garnacha Tinta (2%) grape varieties. After destemming, the grapes fermented in 12,000-liter stainless steel tanks at a temperature of 28-30ºC. Following a maceration period of 15 to 20 days, malolactic fermentation took place, which refined the wine and brought it to its proper acidity.
The wine was then transferred to American and French oak barrels for two years of aging, followed by an additional two years of bottle aging in the cellars before being released to the market.
Tasting Notes for Contino Reserva
- Appearance: Contino Reserva has a deep, garnet color.
- Aroma: Smoky notes with both red and black fruit, hints of cloves.
- Palate: The wine is tannic, still needing some refinement, but shows great nobility, with a long, very fresh finish.
Pairing
Contino Reserva is ideal to pair with cured meats, aged cheeses, roasted red meats, and grilled red meats. It is recommended to decant before consuming and serve at a temperature between 16 and 18ºC.
