We have two selection tables, one in the vineyard, being methodical and selecting only the grape that is at the ideal degree and structure, and the second one on selection tables before being destemmed in the winery.

TASTING NOTES of Diego Rivera Verdejo wine:
Visual phase: High layer, clean, bright, crystalline, and with a straw yellow color accompanied by greenish hues.
Olfactory phase: On the nose, it has a medium-high intensity, passion fruit, pineapple, golden apple, water pear, stone fruit such as peach, apricot, white plum. Floral aromas of orange blossom, fennel, and freshly cut hay, typical characteristics of the verdejo grape, chamomile, and anise.
Gustatory phase: It is powerful on the palate, with fruit weight, structured, reminiscent of fruits such as white plum, apple, pineapple, fennel, it is fresh and has a delicate acidity.
Pairing: Boiled seafood, grilled prawns, langoustines, and scarlet prawns, grilled and sauced fish, black rice and vegetable rice.
