The Domaine Matrot Bourgogne Chardonnay comes from 30-year-old vineyards located in Meursault. These vineyards follow ecological practices, avoiding the use of chemical fertilizers and opting for organic fertilizers. Treatments are adapted to specific diseases and the health of the vines, yields, and maturity are carefully monitored at all stages until harvest.
In the winery, the Domaine Matrot Bourgogne Chardonnay undergoes natural fermentation with indigenous yeasts for approximately 8 weeks in oak barrels. Then, the wine rests on its lees for 11 months. After a racking process, the wine is bottled.
The Domaine Matrot is located in the village of Meursault in Burgundy, right in the heart of the Côte de Beaune. It was established in the early 20th century by Joseph and Marguerite Matrot, and has since remained in the hands of the Matrot family. Currently, the Domaine Matrot covers 23 hectares (equivalent to 56 acres) of vineyards that extend across Meursault, Puligny-Montrachet, Auxey-Duresses, Monthelie, and Maranges. This includes plots in the renowned Premier Cru Charmes and Perrieres vineyards in Meursault. Since 2000, all of the vineyards of Domaine Matrot have been exclusively cultivated using organic methods, in a gradual process that began in 1976.
