Once the grapes are pressed, the first tears that flow from the press without applying pressure are separated. These tears, known as 'mosto yema', undergo minimal maceration with the grape skins. This 'mosto yema' is racked and fermented at a temperature of 17 ºC, preserving its freshness and fruity character.
After a brief maturation period in the winery, the wine is clarified, filtered, and quickly bottled to enhance its freshness and distinctive flavor. The result is a smooth, balanced, and refreshing Tear Rosé wine.
