The situation of the trees following a continuous hedge, allows a maximum illumination of all the foliage, which provides a greater accumulation of fatty acids and a homogeneous state of maturity throughout the tree

The controlled water and nutrient inputs ensure maximum oil quality, following our principle of excellence

The speed of harvesting guarantees the optimum condition of the fruit at the time of harvesting, thus preserving all the aroma and taste of our land and variety.

The oil is harvested at the time of harvesting

Koroneiki is a variety of Greek origin. It provides intense, powerful oils with a lot of personality

After a long and careful journey, once we have obtained the fruit, exclusively from our farms, our mission has only just begun...we started to produce Isbilya:

Olives are harvested in mid-October. This way we achieve an increase in fruitiness (organoleptic characteristic in the tasting reminiscent of healthy and fresh olives). It entails a loss of production, due to the drop in the fruit's fat yield

Harvesting in the less hot hours of the day. It allows to keep the olives at low temperature, in order to achieve an authentic cold extraction (22ºC), obtaining an exponential olive elixir

Collection by means of a riding machine. Thanks to this system we can harvest our entire plantation in a single day, achieving maximum homogeneity in our oils

We only collect olives in flight (on the tree) and positioned in the upper 3/4 of the tree where the fruits that will produce the highest quality oil are located

Milling is done in less than two hours from harvesting.
