Olives are harvested in mid-October. This way we achieve an increase in fruitiness (organoleptic characteristic in the tasting reminiscent of healthy and fresh olives). It entails a loss of production, due to the drop in the fruit's fat yield
Harvesting in the less hot hours of the day. It allows to keep the olives at low temperature, in order to achieve an authentic cold extraction (22ºC), obtaining an exponential olive elixir
Collection by means of a riding machine. Thanks to this system we can harvest our entire plantation in a single day, achieving maximum homogeneity in our oils
We only collect olives in flight (on the tree) and positioned in the upper 3/4 of the tree where the fruits that will produce the highest quality oil are located
