It is a premium extra virgin olive oil, cold-pressed from Picual olives. The olives are harvested early, at the right moment when they are still green, before the fruit starts to change color and the chlorophyll starts to break down. It has an intense fruity flavor of green olives with notes of freshly cut grass, green almond, mint, artichoke, tomato, and green banana. The bitterness and spiciness are very balanced and harmonious.
