Elaboration and Aging
Figuero 12 is exclusively made from Tempranillo grapes, with an average age of 40 years. Manual harvest carried out in 12 kg chestnut baskets, meticulous and immediate transportation to the Winery. Gravity tank fermentation using the OVI system. Cold skin maceration for 2 days at 12ºC. Spontaneous alcoholic fermentation at a maximum of 29ºC.
2 daily pump-overs and 1 "délestage" at the end of fermentation. Total maceration of about 17 days. Spontaneous malolactic fermentation.
Aging for 12 months in new 1-wine barrels. 60% American, 40% French. Clarification with egg white. Bottling and aging in the same until completing 2 years.
Tasting Note of Figuero 12
- Appearance: Figuero 12 is an elegant red wine with an intense cherry red color and cardinal red edges. Clean, bright, and quite deep.
- Aroma: Great aromatic intensity with a lot of freshness. Red fruit stands out in a wide range of spices (vanilla, cinnamon, nutmeg, and pink pepper). The wood seduces with notes of blond tobacco and toffee.
- Taste: Wide entry with very good tannic structure, prolonged by great acidity. Surprisingly fresh for a wine of that power. A mouth with a marked personality and perfect harmony. The entire aromatic range perceived on the nose is found again on the palate.
Pairing
Figuero 12 is ideal to accompany meat rice dishes, game, mushrooms, roasts, cured meats, and stews.
It is recommended to consume this wine at a temperature between 16 and 18ºC.
