Jerez-Xérès-Sherry Fino Micaela

Made from Palomino grapes and Barón wineries

Average Age: 3 years.

Production and Aging: Fino wine is obtained from the total fermentation of Palomino grape must. The base wine obtained is fortified to 15% alcohol by volume, in order to promote the development of the Flor veil; the natural protection of the yeasts will prevent the oxidation of the wine throughout its aging and give it very special organoleptic characteristics. This biological aging lasts for a period of five years and is carried out in American oak barrels using the traditional system of criaderas and solera.

Golden yellow with copper tones. Pungent on the nose, aromas of biological aging, nuts (hazelnut, almond), acetic and medicinal background. Notes of angel hair. Dry, tasty, good acidity, with volume and amplitude. Very expressive and balanced. Palate with aromas of nuts and a long finish with saline and biological aging reminiscences. Elegant bitterness.

Pairing: Ideal with Shellfish, Clams Marinera, Baked Fish, Cold Cuts and Anchovies. Sushi, Tempura, Bouillabaisse, and Guacamole.

Storage and recommendations: Boxes should be stored in a cool, dry place, at room temperature. Serve very cold between 7 and 9 ºC.

Capacity: 75 cl.

Serve between 8 and 9º C.
