Between the months of April and September, these fragile microcrystals composed of different types of salts, are collected daily with manual and artisanal systems, dried in the sun and then packaged in different market containers. Harvesting is carried out every day when the weather conditions are ideal for the production of the product, sunny day, high temperature, and little wind. If the grain is not harvested, it will sink to the bottom of the pool once crystallized and lose its properties. For its harvest, a special shovel "lousse" is used. It is left to dry in the sun and wind to obtain a pure product, without additives but with a very limited production.
