The Fine Raw Tío Pepe Sherry is made from 100% Palomino Fino grape variety and has a D.O. Jerez.
Fine Raw Tío Pepe is an unclarified and unfiltered fino, obtained from the central part of the cask during spring, when the flor yeast is most active.
The harvest that takes place in the "Marco de Jerez" is of utmost importance for the production of Fine Raw Tío Pepe Sherry. It is done manually, and the grapes are transported in 15 kg boxes to prevent them from breaking and to keep them intact, thus preventing fermentation before reaching the winery.
The grapes are gently pressed to obtain the "Mosto Yema" with which the Fine Raw Tío Pepe Sherry will be made.
After fermentation in stainless steel tanks at controlled temperature, classification, and fortification of the wine, it enters the "solera" where it will remain for approximately one year in American oak casks before becoming part of the "Criaderas y Solera" system, where it will stay for at least 5 years.
