Domaine Weinbach is one of the three most prestigious wineries in Alsace. Its wines are recognized worldwide for their extraordinary quality. Collette Faller and her daughters Catherine and Laurence are the owners of 26 hectares spread over the different Crus of the Kaysersberg Valley. They practice biodynamic and organic viticulture. They have planted Riesling, Gewürztraminer, Pinot Gris, Sylvaner, Pinot Blanc, Muscat, Chasselas and Pinot Noir. The grapes are harvested by hand and, when the vintage is favourable to the development of botrytis, the grapes are harvested in November. The existence of a great geological diversity -typical of Alsace- combines soils of all types -clay, limestone, granite, sandstone, sand and silt-, giving rise to a wide variety of terroirs with great personality, and in the case of the Grand Cru in an exceptional way. Fermentations take place in old oak foudres and some sweet cuvées take almost a year to finish. In order to maintain the integrity and expressiveness of the wine, it is bottled without filtering or chilling. Following the philosophy of minimal intervention in the winemaking process all the wines, from the generic to the most reputable, all exhibit great elegance and finesse.

The Late Harvests, the Sélections de Grains Nobles and the Quintessences de Grains Nobles represent another expression of our terroirs, magnified by overripening and Botrytis. They are exceptional wines that stand out for their great aromatic complexity, their low concentration and their perfect balance. Sélections de Grains Nobles are obtained through a rigorous selection of berries affected by noble rot. They are true nectars, dense and balanced. The quintessences of noble grains are extremely rare. Nectar des nectars, these are small productions of Superlative Noble Grains Selections, in only a few vintages. The name Quintessence was born at Domaine Weinbach, first carried by a sumptuous vintage of the 1983 vintage.

Domaine Weinbach

From the Capuchins to the Faller family. At the foot of the majestic Schlossberg hill, in a setting of vines and roses, the "wine stream" Domaine Weinbach, named after the small stream that crosses it, was built in 1612 by Capuchin monks. Sold as national property during the French Revolution, the estate was acquired in 1898 by the Faller brothers, who passed it on to their son and nephew Théo. A great figure of the Alsatian vineyard and a fervent promoter of its recognition as an Appellation d'Origine Contrôlée, Théo Faller works for the quality of Alsace wines and the enhancement of its incomparable terroirs and grape varieties. In love with his property, he developed, expanded and embellished it. Since 1979, his wife Colette and daughters Catherine and Laurence showed the same passion for the great wines of Alsace and the same unwavering attachment to quality. Since 2016, Catherine Faller has been running the estate with her sons Eddy and Théo.

In the municipalities of Kientzheim and Sigolsheim, between 300 and 400 m above sea level, the brown limestone soils of the Furstentum have a stony, shallow, filtering structure with bedrock outcrops. These are lower Dogger (secondary age) terranes of marl, limestone and sandstone partially overlain by Tertiary conglomerates. Marl provides power and structure; elegance, vibrancy and sandstone complexity. Facing south, its summit is an island of calciphile Mediterranean vegetation. The slope is significant, optimizing insolation on a soil accumulating heat and water. The Furstentum is mentioned in 1330 in the inventory of vines belonging to the convent of Basel. Furstentum favours excellent ripening in Weinbach Gewurztraminer. They extract from it remarkable aromatic complexity, great finesse and long ageing potential.

Biodynamics can be seen as a fringe way of making wine, but it is based on ancestral methods often practiced empirically in orchards. We also know the importance of the moon, sun and stars in the tides. Biology and biodynamics have in common the ploughing of the soil, the abandonment of chemical fertilizers, pesticides and synthetic fungicides, whose exact effects in the medium and long term are not controlled. These synthetic products interfere with life and the natural balance and can lead to the denaturation of the living organism as a whole. We practice the two philosophies in parallel for a period of time in order to better study and compare the peculiarities of each one. The application of biodynamics, which makes the grape more complex but also more sensitive, must be adapted precisely to our different terroirs and to the meteorology of the year. There is no doubt that biodynamics, with the experience we have acquired over the years, brings another dimension to vine growing. A vine in harmony with its environment produces a more complex and more natural grape and, therefore, a more complex, more authentic and, in short, more unique wine.
