The collection of SABOR D'ORO Almazara Selection olives is carried out with the same cleanliness and care as our earliest oils. The main difference is the time of collection, which in this case takes place during the months of November and December. During these months, the green olive is mixed with those that have a purple tint, a sign of more advanced ripeness. Tasting Notes: At first, a delicate and fresh nose, full of fruity aromas of alloza and green olives mixed with the aromas of tomato stem and vegetables, all in great harmony and extraordinary complexity for pairing. Subsequently, a beautiful intensity and subtle bitterness are revealed, without being aggressive but present. A very fresh, balanced, and round mouthfeel is appreciated, with flavors that remind us of green almond, green grass, artichoke, tomato plant, and green apple.
