The Reserva ham is cured for 14 months in our natural cellars. They are located in the foothills of Sierra Nevada and Sierra de los Filabres, a privileged place. Its altitude above sea level, with fresh, pure, clean air; its climate with cold, dry winters and hot, equally dry summers, provide a microbial flora that does not exist in other places and is favorable for a good ham. From the first moment the hams are classified piece by piece in order to correctly apply the minimum salt needed for each one; our technicians watch over the whole process of elaboration and maturation to ensure that the strictest quality parameters are met
