Cooking tips
First, prepare the coals and do not start cooking until they are at the right temperature and without flames. Before cooking the meat, make sure the grill is very hot. Sprinkle coarse salt on the coals to make them last longer and reduce smoke.
Remember, do not pierce the chorizo during cooking to prevent it from losing its juices.
It is better to add salt when you flip all the pieces, a little before removing them from the fire.
Storage of criollo
We recommend keeping them between 0º and 5ºC. Preferably consumed within 7 days. Tip: take it out of the refrigerator 30 minutes before cooking to let the meat come to room temperature. If you are not going to consume this product in the short term, you can freeze it without any problem.
