Tomato Sofrito Preparation
First of all, put a pan with oil and slowly fry the onion. Then add crushed garlic and let it cook for a few minutes. Then add the crushed tomato, salt and a little sugar to achieve the desired acidity. It is packed in glass jars and sterilized.
Preservation
Tomato Sofrito sterilizes in autoclave at 120or and 1 bar pressure. These parameters ensure the sterilization of the product, which is preserved for 3 years without the need for refrigeration
Tips for use and presentation of sofrito de tomate
It is used directly as it is in the package. To accompany boiled pasta, fish, meats, meatballs, to make noodles, rice, and as a base for dishes of greater complexity
