The color of the lean has three shades that go from intense red in the most cured areas, pink. At room temperature are the brightness derived from white intermixed amazonic fat and small "crystals" also white, indisputable sign of low salinity and gradual and slow healing. The fibers of the muscle present pink nuances, which makes think of a prolonged healing and the purity of the race.
The meat of the mace is soft, juicy, unctuous... It gets rid of the hands. The tip and the knuckle have a more fibrous consistency, firmer and Prieta, which increases the time and enjoyment of chewing.
