How did we do it? We implemented the "Tasty Roasted" method, keeping the roasting by hand in our horizontal tray ovens. 1) We wash the nuts, add a pinch of sea salt in a carefully calculated proportion (1.5%-2%, depending on the nut).
2) On the other hand, we put 4% extra virgin olive oil (EVOO) on our horizontal trays.
3) We place a thin and unique layer of nuts on the tray with the EVOO.
4) We turn by hand all the nuts, mixed with EVOO and salt, every 8 minutes until achieving a perfect crunch.
The result:
- Elimination of sugar.
- Carefully calculated salt proportion.
- Nuts that retain the flavor of roasted nuts, but without the inconveniences of them: greasy, heavy, messy, reused oils, or low quality.
