What we have achieved will fascinate you: we have developed a formula and technique that eliminate sugar, while maintaining the delicious flavor of roasted nuts.
How did we do it? We implemented the "Tasty Roasted" method (tasty roasted), maintaining hand roasting in our horizontal tray ovens. 1) We wash the nuts, add a pinch of sea salt in a carefully calculated proportion (1.5%-2%, depending on the nut).
2) Some of our nuts, such as pistachios with shell, peanuts, almonds with skin, and pecans, receive special treatment: instead of EVOO, we add D.O.P Pimentón de La Vera, providing a smoky touch without losing the saltiness.
3) We place, on top of the tray, a thin and unique layer of nuts.
4) We turn by hand all the nuts every 8 minutes until achieving a perfect crunch.
