Fresh cheese made with the milk production from our Churra sheep. We make our fresh cheese twice a week to achieve an even fresher cheese, which can always be enjoyed at its optimal and freshly made point. It is an unripened cheese, an early cheese, in which we only use freshly milked milk and rennet to prepare it. Within 24 hours it is unmolded and ready for consumption. It is a soft, light cheese with a lower fat percentage; and its texture is closer to that of ricotta than to that of a conventional cow's milk fresh cheese. It is delicious on its own, although it can also be used in baking or accompanying salads, toasts or very fresh dishes, without taking away from the other ingredients.
