This extraordinary vinegar has been elaborated from oloroso wines typical of the Cordoba region of Montilla-Moriles.

The oloroso wine is a generous wine of high quality made from grapes of the palomino variety which has undergone an aging process of at least two years in oak barrels.

Unlike other vinegars where low quality wines or wines that have spoiled are used, DE LA CUEVA vinegar uses top quality wines as raw material.

Our philosophy is that from a good raw material a good vinegar should be produced.

The oloroso wine undergoes a traditional acidification process and is then aged in oak casks using the solera system for a minimum period of 20 years.

The result is a mahogany-colored vinegar with amber tones, acquired during its aging in wood, clean and penetrating to the nose, where some characteristic touches of aging in American oak stand out. It is a vinegar with a dry, intense and balanced flavor reminiscent of Oloroso wine, with an exquisite and smooth aftertaste that gives it an exclusive character and personality.
