The amaranth plant can be used practically in its entirety. The stems are consumed as a vegetable and its leaves can be added to different stews or used to make soups, creams or tortillas. Its seeds are used to make various foods such as cookies or "dulce de alegría", a very popular dish in Mexico made with amaranth seeds, honey, raisins and nuts.
