Apple varieties
Regarding the apple varieties we use, they vary depending on the time of year. We adapt to what the field gives us as we respect the rhythm of the harvest.
We almost always mix two types of apples, one of them slightly more acidic to give the juice some liveliness.
We mainly use Golden apples, sometimes Royal Gala, Fuji, and very often Reineta-type apple.
Our apples are locally sourced. We mostly bring them from Lleida, but trucks from Aragon and Navarra also come frequently. We frequently visit our suppliers to see firsthand how they work and care for the fruit.
