Why is Cocido Broth so Healthy
Catalan cocido or escudella, is characterized by including among its ingredients the pilotas, a kind of elongated meatballs with a croquette shape, made with meat, egg, bread, garlic, and parsley, which are cooked in the broth. Also, it is peculiar that, instead of using noodles or rice, the soup is served with pasta snails called galets cooked in the broth.
