The durum wheat from which this pasta is made comes from ecological and extensive dry farming, in private farms located in the steppe areas of Belchite or Los Monegros, in the valle del Ebro, where the El PlanerónOrnithological Reserve is also located.

Riet Vell buys this wheat from farmers selected by the location of their plots, under the supervision of SEO/BirdLife and trying to offer better economic conditions. These are very low yielding areas in kilos per hectare but ideal for very good quality durum wheat for processing into pasta.
